Dive into the heart of Jamaica with this Vegetable and Soya Chunks Curry, rich in flavors and tradition!

  • 1 large yellow onion
  • 3 stalks scallion
  • 2 sprigs fresh thyme
  • 4 cloves garlic
  • 7 ounces soya chunks
  • 3 tablespoons olive oil
  • 1 tablespoon Jamaican curry or curry of your choice
  • 1 teaspoon salt 
  • 1 teaspoon black pepper 
  • 1 teaspoon all-purpose seasoning for added flavor
  • (Optional) vegetable broth (amount is to individual preference)


  1. Finely chop the onion, scallions, thyme, and garlic cloves. Separate 2 chopped garlic cloves to the side.
  2. Bring a pot of water with the soya chunks inside to a boil, then drain excess water.
  3. Heat a skillet to medium temperature with 3 tablespoons olive oil and add 2 chopped cloves. 
  4. Add 1 tablespoon Jamaican curry or curry of your choice to the skillet and let cook until curry is completely mixed in with the oil. 
  5. Add the rest of the chopped vegetables to the skillet and let them lightly saute.
  6. Add the soya chunks and mix in thoroughly. 
  7. Add salt, black pepper, and all-purpose seasoning for added flavor.
  8. Once sautéed, add water or vegetable broth for desired gravy consistency.  Let cook for 5 minutes, then it is done!
