About this Recipe

This vegan macaroni & cheese dish is creamy and cheesy and makes for a flavorful side that is perfect for any occasion.

  • 1 pound box of macaroni noodles
  • 1-2 cans unsweetened coconut milk
  • 1 7-ounce pack vegan mozzarella cheese
  • 2 7-ounce packs vegan cheddar cheese
  • 1 7-ounce pack Mexican blend cheese
  • Salt to taste
  • Pepper to taste
  • 1 tablespoon crushed pepper flakes
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder


  1. Bring one pot of water to boil and add salt and then pasta. 
  2. Boil for about 9 minutes or until al dente.
  3. In a separate pot, pour in a can of coconut milk (use 2 for an extra creamy consistency), let warm and then add the cheese, stirring until melted.
  4. Stir in garlic powder, crushed red pepper flakes, smoked paprika, and salt and pepper if needed.
  5. Add strained pasta into cheese sauce and stir.
  6. The pasta can be served from the pot or it can be poured into a greased baking pan and placed in an oven preheated to 400 degrees F. Bake for about 10 mins or until the top slightly browns.
