Fried Oyster Mushrooms (Vegan Fried Chick’n)

  • Oil for frying 
  • 150 grams oyster mushrooms
  • 1 cup chickpea flour
  • 1 cup sparkling water
  • 1 cup all-purpose flour


  • 1 teaspoon all-purpose seasoning
  • 1 teaspoon paprika 
  • 1 teaspoon salt
  • ½ teaspoon cayenne pepper
  • 2 teaspoons onion powder
  • 2 teaspoons garlic powder
  • 1 teaspoon thyme
  • 1 teaspoon oregano
  • 1 teaspoon parsley


  • (Optional ½ cup breadcrumbs)


  1. Locate the thick stem at the bottom of the oyster mushroom cluster and cut off each mushroom so they are all separated. You can very lightly clean the mushrooms with water to remove dirt and debris, careful not to soak it in water. 
  2. Get 2 bowls, one for the wet batter and another for the dry batter. 
  3. In the wet batter bowl, mix equal parts of chickpea flour and sparkling water and beat with a whisk until well combined.
  4. Add half of the seasonings and mix thoroughly with the whisk.
  5. In the other bowl, for the dry batter, add the other half of all of the seasonings, the all-purpose flour, and breadcrumbs if using. 
  6. Add the mushroom pieces into the wet batter and cover completely for 5 minutes.
  7. Heat oil in a skillet on medium-high heat.
  8. One at a time, remove mushroom pieces from the wet batter and roll in the dry batter, completely covering it. 
  9. Add each mushroom to the skillet and fry until golden brown. Enjoy!
