About this Recipe

Cornbread is my absolute favorite Southern comfort food. When my sister and I are together, we often make a big batch of vegan chili and then another big batch of vegan cornbread and crumble the cornbread in the chili and mix in vegan sour cream, like a big cornbread chili sourcream soup! This might be my favorite meal in the world. Outside of the cornbread-chili-sourcream soup, cornbread is great with any Southern dish. Whether paired with greens, mashed potatoes, vegan fried oyster mushrooms, or the many other dishes in this resource, it is a side that never disappoints! Enjoy with vegan butter melted on top for some extra soul!

Ingredients

  • 1¼ cup cornmeal
  • 1 cup all-purpose flour
  • 1¼ cup plant milk
  • Flax seed egg (1 tablespoon flaxseed meal + 3 tablespoons water)
  • 2 teaspoons apple cider vinegar
  • ¼ cup vegan butter (melted)
  • ½ teaspoons baking soda
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • ¼ cup maple syrup

Instructions

  1. Preheat the oven to 400 degrees Fahrenheit. 
  2. Prepare your baking pan by greasing with oil. Set aside.
  3. In a bowl, prepare the flax egg by mixing the flax seed meal and water together thoroughly, then allowing it to sit for at least 5 minutes. Set aside.
  4. In another bowl, mix the vegan milk and apple cider vinegar together and let sit for at least 5 minutes. Set aside.
  5. In another bowl, add the cornmeal, flour, baking soda, baking powder, and salt together. Mix together thoroughly.
  6. In the bowl with the vegan milk and apple cider vinegar, add the vegan butter, flax seed egg, and maple syrup. Mix together thoroughly.
  7. Add the bowl with the dry ingredients to the wet ingredient mixture and mix thoroughly. Making sure to get rid of any clumps so that the batter is well combined.
  8. Pour the batter into the baking pan and bake for 25 minutes or until a fork/toothpick can be inserted and comes out clean. 
  9. Remove cornbread from the oven and let cool. Enjoy!
