Instructions

For the “Conch”

  1. Mix all ingredients for cooking liquid.
  2. Place mushrooms in the cooking liquid and boil on medium for 20 minutes.
  3. Add more water to the pot to replace any water that may have evaporated out.
  4. Remove from heat and allow mushrooms and cooking liquid to cool down to room temperature.
  5. Transfer mushrooms to an airtight storage container and pour cooking liquid over top.
  6. Cover and refrigerate overnight. Use as desired.

For the Mayo Ketchup Dip

  1. Combine all ingredients together in a mixing bowl. Whisk until smooth. Set aside in the refrigerator.

For “Conch” Fritters

  1. In a small mixing bowl mix together flour, baking powder, and potato starch. Set aside.
  2. In a separate large mixing bowl combine all of the wet ingredients (not the oil) along with the spices.
  3. Taste for spice adjustments.
  4. Combine the dry ingredients into the wet ingredients and mix thoroughly.
  5. Set up your cooking station next to the stove, having a paper towel lined tray on the counter next to fritter batter and perforated spoon.
  6. Add oil to a high walled small pot and heat on medium heat. The oil should reach a temperature of 350 farenheit before you begin frying. Use your thermometer for this step.
  7. With a scoop or large spoon drop a couple fritters into the hot oil. Cook until fritters float and become golden brown, approximately 2 minutes. Place on top of a lined baking sheet.
  8. Serve alongside the dip.
